For homebrew quality wine kits, Cabernet Sauvignon grapes give an excellent result well worth ageing to achieve a top quality homemade wine. Combined with oak chips to simulate barrel ageing this grape will produce a very high quality red wine. When young, the Cabernet Grape has a grassy nose and harsh bite often with purple or violet tones. The mature wine has a deep red colour, sometimes almost brownish. It is mellow with great depth of flavour, complex, and with fruit flavours of blackberry and blackcurrant. Cabernet Sauvignon is known as a "hard" grape, making wines of classic breed and complexity that often need to bottle-age for at least 5-10 years in order to reach peak flavour condition. When grown in Italy it is sometimes referred to as the Uva Francese. |

Although recorded as present in the Bordeaux region since at least the 17th century, parental provenance has always been unsure. Recent research, (Meredith and Bowers, "Nature Genetics Journal" 5-97), has unexpectedly discovered that the original parents of this variety were Sauvignon Blanc and Cabernet Franc, an astounding reversal of previous assumptions. |
