The House of Hambleton Range has been one of our best wine kits for many years. Now we have taken it a step further and incorporated many of the features we developed for our Super Quality range, the extreme Grand Superior wine kits. We have introduced a new exciting red, the full bodied Bordeaux Style, which replaces the old Rioja which we felt we could not improve up to the new standard. [Sept 2004] New types again! Improvement #1: Varietal yeast The yeast we used before was a little bit too fast, the wine often fermented out before the time stated in the instruction. This tends to "bleach" out some of the vinous qualities and colour of the wine. So we decided to use two new strains, one for red wines and another for whites. Both strains are a bit slower and also more specialised. We feel this has been a major improvement to the kit. Improvement #2: Varietal oak chippings We have included a sachet of carefully selected winemakers oak chippings with each kit. We use French oak for the reds and American oak for the whites. It may seem strange to use oak chippings for the whites but provided the right oak and the right amount is used it improves white wines as well. Improvement #3: More quality grapes We have improved the amount and the quality of the grapes in all red wine making kits, again using our experiences from the development of the exclusive Grand Superior range. Improvement #1: Bentonite A final improvement is the addition of a bentonite sachet to the the white winekits. We don't use this on the reds because although it improves the taste, it tends to remove some colour as well from a red wine. |
