Turboyeast temperature - you need to watch your temperature, too high and fermentation sticks. This is the single most important factor for a successful fermentation. Sugar - different types - sucrose, dextrose, how to add it to your wash, qualities etc. Bacterial attack - the wash looks like wallpaper glue. A very unusual problem which seems to occur rarely for Alcotec 8 and similar turbo fermentations but with the new generation (Alcotec 24, Alcotec 48 - both using new formulas) the problem has gone away.pH - don't control pH by adding anything, i.e. don't add citric acid or acidity regulator! Fining of the wash - improves spirit quality enormously after distillation. Avoid the old style fining agents based on Gelatine and Kiselsol, they really belong to the 1980's. There are now super fining agents available, like the Alcotec TurboKlar which will do the job without off-flavours and in downto 24 hours only! |
