Turbo Yeast and bacterial infections

High alcohol turbo yeasts are more sensitive in general than the normal 3-day, 14% type. One infection we have seen with Alcotec 8 is the "wallpaper glue". It is very unusual but here's what to do if it happens.

In some cases when a certain type of bacteria is present (in your house, room, taps, pipes etc) it can infect the wash and start converting the sugar into "long-string" sugar type molecules. If it happens, it will happen early in fermentation and since these molecules are unfermentable you will get a very low amount of alcohol.

You can not save the infected brew.

If this happens, you know this bacteria is around. You can not get rid of it.

One way we found it got into a brew was when there was a lot of froth, foaming over the edge of the fermenter - especially if left that way for a while. If you know that you had this problem, this is probably how your brew got infected. Next time - wipe it clean and try to prevent foaming.

It can also help to just move the brew to another room, use another tap for water (and obviously sterilise all equipment well, goes without saying) etc but if none of these tricks work there is no way out. You will have to resort to Alcotec 6 which is less sensitive.
