Many winemakers are used to regulating pH by adding citric acid or acidity regulators. The simple bottom line for Turbo Yeast: DON'T! A Turbo Yeast is optimised for fermenting a sugar+water solution, it includes it's own regulators. If you introduce other substances you will always decrease performance! What many home distillers do not realise is that modern distillation is often done from a slightly acidic wash. With a very good still, this is optimum - it will produce more alcohol. The only reason one could be tempted to adjust (neutralise) the pH would be if you use a pot still which is not as efficient as a reflux - but we still don't recommend it because most pot stills are made (at least parts) of copper and you risk getting your moonshine alcohol slightly blue or green from the copper if you neutralise using traditional methods. Use a good Pot Still Turbo instead - Alcotec is about to launch one soon [Updated Jan 2004, launch sometime during first half of 2004]. |
