Why do I need to check if fermentation has started?

The start is the critical moment - if anything goes wrong here, the entire brew may be destroyed. If the start is delayed for some reason, your brew will be subject to competing yeast and mold strains that could take over and destroy it. Once your wine/beer yeast has started working, it will protect the brew from other strains.

So, if your brew is late you really want to know it and add more wine/beer yeast.

How to do it:

Check the reading daily and if you notice a drop you know that your fermentation has started.
