Use: Bittering hop. Imperial Stout, Amerikansk Pale Ale, IPA.

This is one of the "Super High Alpha" varieties. Used for bittering where it produces a softer bitterness than Chinook. The aroma if use as late addition is earthy, soily, grassy and with a hint of spicyness.

Use: Dual purpose. American Ales, DIPA, Wheat Beer, Barley Wine.

This hop variety, created in 1974, is sometimes also called "Super Cascade" although lighter on the citrus aromas. Notes of mango, citrus and flowers.

A relatively new variety, created in the 1980's. Good for early boil or mid additions. Heavy aroma, and a spicy bouquet. Notes of pine and herbs.

Use: Dual purpose, well suited for American Ales.

First released in 2007, this new variety has great tropical fruitiness with flavours of passion fruit, mango, lime and gooseberry.

Use: Dual purpose. American Ales, Pale Ales, Stouts.

Heavily grassy aroma with hints of grapefruit. Mostly used for bittering but it can have dual purpose. Sometimes named Tomahawk or Zeus (strictly, Zeus is every so slightly different but usually bundled up with the other two). Often named CTZ because of the connection with the other two types.

Substitute: Centennial, Chinook, Galena, Nugget

Alpha acid: 11.5-14%

Beta acid: 7-9%

Use: Bittering hop.

Very clean and crisp bitterness and with a high myrcene oil content, higher than most other hops. This adds the hint of sweet fruit, peaches and grape and also elements of wood and grass.

Mosaic, also known under the experimental name HBC369 can be described as Citra on steroids. Rich in citrus flavours, lemon, mango and earthy pine, tropical fruit and notes of stone fruit and herbs.

Mt Hood

Use: Aroma. American and German lagers and ales.

Mount Hood is one of several descendants of the German Hallertau variety. Similar qualities as Hallertau and Hersbrucker. This is an american hop variety with a German flavour. Mild tones of spices and flowers.

Heavy, powerful herbiness with great bitterness. Can be used in small quantities for bittering. It has a relatively high myrcene oil content which brings out the woody tones.

Use: Aroma hop. British Ales and American Ales, IPA's.

Soft Apricot, fuity hop aroma and taste. Subtle and fresh herbal, grassy character. Early kettle additions but also later additions and dry hopping.

Use: Dual purpose. American IPA, and also other Pale Ales.

Intense aroma and flavouring hop with powerful tones of tropical nectar, passion fruit, mango and pine. Also good for bittering. Very high myrcene oil content (60-65%). Complex aroma, perfect for bold craft ales.

Substitute: All American hop varieties starting with "C".

Use: Dual purpose. American Ales, Pilsners, Czech Lagers and Belgian Ales.

This variety, developed 1990 has a relatively low co-humulone content and it is sometimes mentioned amongst the noble hops. Like Mount Hood, this is an American hop variety with a German connection. Spices and herbs dominates but there are also hints of subtle citrus and flowers.

Summit

Use: Mainly bittering but can also be used for aroma. American Pale Ales, IPA och DIPA 

This variety was developed around year 2000, it belongs to the "Super Alpha" class with a high alpha to beta ratio. Powerful bittering if early kettle addition but can also be used later in the kettle. Strong citrus, tangerine, orange aromas. Summit is a semi-dwarf variety, the first of its kind originating in the United States.

Willamette

Use: Aroma hop. American and British Ales and Lagers. 

Willamette was first released in 1976 and it is by now a classical American type. Earth, flowers and spices dominate in a soft composition.

Zeus

Use: Dual purpose. American Ales, Pale Ales, Stouts.

Zeus is usually bundled up with Columbus and Tomahawk into the CTZ group. Of the three, Zeus is actually genetically different but the qualities are so close so for practical purposes it can be thought of as one variety - the Coumbus-Tomahawk-Zeus. Heavily grassy aroma with hints of grapefruit. Mostly used for bittering but it can have dual purpose. We are listing this separately as although almost identical, we get different alpha acids between batches so we provide both Columbus and Zeus. The exact Alpha content for the batch is listed on each bag.

Substitute: Centennial, Chinook, Galena, Nugget


Zythos

Beta acid: 4.7-6.2%

Co-humulone (% of alpha acids): 28-31%

Use: Dual purpose. American Ales and IPA's.

Zythos is a mix of different American hops. Tones of grape, pine, mango and citrus.

Substitute: Simcoe, Citra, Palisade, Amarillo.
